While not unique to Wessex, cider is often associated with the region, and in addition to being drunk, is frequently used as a cooking ingredient in local recipes, pork in cider sauce being probably the archetypal Wessex dish. Cider was made the subject of an epic, 2-volume poem by John Philips in the 18th century. See the Real Cider page for a nationwide directory of real cider producers and pubs.
